Beliveau Estate Wine and Food Pairing



Sweet Surrender:  This wine was very sweet and tasted exactly like grape juice with some alcohol in it. When we paired it with lemon, the taste became very acidic.  When the wine was paired with apples it brought out the sweetness in the wine and the apple.  However when paired with the salt, the sweetness was covered up and the wine became a lot drier.


Kaleidoscope:  This wine was a very crisp white.  Slightly acidic and tannic.  When we tasted it with the lemon, the lemon cuts it and makes it sweeter.  When tasted with apple the wine becomes very acidic.  When tasted with the butter the wine is very dull and the flavor is masked.  When we tasted it with salt, the salt over powers the wine and ruins most of the flavors.


Mystique:  This wine was oaky and kind of dry on the first taste.  When we paired it with lemon the oak flavors are brought out significantly but it also watered down the wine.  We then paired this wine with butter which brought out a lot of the tannins and buttery flavor of the wine. Salt also brought out the tannins in the wine.  We also tried this wine with peppermint and the oak in the wine brought out the peppermint flavor in the candy.


Silhouette:  This wine was a rich red wine.  Smelled fruity and tasted of cherries and spices.  When we tasted this wine with butter the wines richness was increased.  However pairing this wine with the salt brought out the tannis and oak, making the wine sweeter and smooth.

During this wine tasting experience I learned a lot about what types of food pair correctly.  You should usually attempt to fair your fattier foods with darker red wines where the fat can cut the acidity. You should also pair your sweeter wines with sweeter foods like the apple to bring out the flavors and cut down on the sweetness of the wine and avoid things like the lemon which makes the wine very acidic.  Also I learned that pairing the wine with certain foods can have the reverse effect such as with the Mystique where pairing it with the peppermint brought out the flavors in the candy as opposed to the flavors in the wine.
